As someone who often seeks out gluten-free and sugar-free options, I approach them with cautious optimism – sometimes they can feel like a compromise. This cake was absolutely not a compromise, and nobody could tell it was GF or sugar-free! The tart raspberry filling complements the rich chocolate flavor really well, and the cake is moist. You can indulge in this without feeling bad -physically or emotionally . I’m also glad they use erythritol to sweeten the cake, and not aspartame or sucralose.
