As with each of our Traditional Method Fine Ciders, this is made made from a field blend of apples from unsprayed traditional Devon orchards. Varieties are chosen for their bright, fresh acidity, alongside a handful of sweet Devon cider apples to smooth & round. These undergo a spontaneous primary fermentation before secondary fermentation with champagne yeast and a further two plus years maturation on the lees in the bottle before being hand riddled and disgorged.
